Today I have been making South Indian Lemon Pickle.I made several batches last year and was then asked if I could make it gluten free. I struggled to find a source of asafoetida that did not contain any gluten - but finally I did. Since then I have only made it gluten free and the taste is no different.
For those who have never tried it - this lemon pickle is VERY hot! It is a great accompaniment to an Indian Curry- packed full of flavour.
It is one of those products that appreciates being matured, so the batch I have made today will sit in a dark cupboard for 6 weeks before it is ready to be sold and consumed.
This pickle is one of my favourite recipes and I really enjoy making it.
