Fresh Quinces from my Uncle's Garden

We picked these just the other day, and now the first batch of Quince jelly is already made. It is amazing how it turns red as it cooks, and yet as you can see the fruit is yellow skinned and inside is white like an apple. Where the red comes from is a mystery!
